One of the problems we have these days is coming up with new ideas for supper/dinner that can be made in a short amount of time. Eating the same things over and over gets boring and leads to unneccessary eating out.

Thus I propose this thread as a place to collect and share tried and true family recipes that you use today or ate as a kid.

My offerings:

Poverty Meal (ripped from Recipezaar.com)

Ingredients
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 lb ground beef, browned and drained
2 (16 ounce) cans stewed tomatoes
1 (16 ounce) can water
8 ounces elbow macaroni, raw
salt
pepper
parmesan cheese (optional)

Directions
Saute onions and garlic in olive oil until translucent.
Brown ground beef and drain.
Add ground beef, tomatoes, water, raw macaroni, salt and pepper to the onion and garlic mixture.
Cook for 15 to 20 minutes or until macaroni is tender.
If desired, top with Parmesan cheese.

We used to have a variation of this as a kid, and I forgot all about it until I saw it on RecipeZaar. We had it with buttered french bread and damn it was good.
 
1 28 oz can black beans
1 can mild rotel tomatos
1 8 or 6 oz can chopped green chilies
1 16 oz can sweet corn (drained) maybe 1/2 can depends on your corn preferences
heat on stove until hot 5/10 min
top with shreadded cheese
serve with tortilla chips or tortillas

add in depending on preference: crushed garlic and chopped onions

could also add in rice...these basics can offer a wide variety of combinations
 
Glazed Chinese Beef & Broccoli:

1/2 pound Broccoli
1/2 pound Flank Steak, chopped (2" x 1/8" thick)
3 Cloves Garlic, Minced
1 Tablespoon shredded Ginger (fresh root)
Vegetable oil (couple tablespoons should be fine)
1 Tablespoon Soy Sauce
1 Tablespoon Corn Starch
1.5 Tablespoons Oyster Sauce
1 Tablespoon Sesame Seed Oil
3/4 Tablespoon Sugar
Sesame Seeds to garnish

1. Marinate meat for 15 minutes in Soy Sauce and Cornstarch
2. Stir-fry Broccoli in Wok on high with 1 Tbps Veggie Oil for 1 minute, set aside in a bowl
3. Stir-fry Garlic & Ginger for 10 seconds with 1 Tbps Veggie Oil
4. Add in meat, stir-fry on high for 4 minutes
5. Add in broccoli, mix around, add in osyter sauce and sesame seedo il, mix around, add in sugar, mix around, dump in bowl (about a minute or two total)
6. Serve with sesame seeds on top as garnish

15 minute marinate time
> 10 minute cook time
 
1 Large Onion Chopped
1 lb Ground Beef
2 can condensed Cream of Mushroom (or Cream of Chicken) soup
Rice

Brown and spice ground beef. Add soup and sautee until hot. Cook rice separately. On a plate put some of the cooked rice and then some of the beef/soup mixture on top.

This is also really good if you replace the beef with boneless Pork Chops and cook in a slow-cooker/crock-pot for awhile.
 
Ramma2, your receipe sounds like a variation of a recipe I like:

JOHNNY MARZETTI CASSEROLE

1 (12 oz.) pkg. noodles (or elbow macaroni)
2 lbs. ground beef
1 onion, chopped
1 green pepper, chopped
1 stalk celery, chopped
2 cans tomato soup
1 can mushroom soup
1 lb. Cheddar cheese, cubed

Cook noodles; drain. Brown ground beef; add onions, celery and green pepper. Simmer soups and cheese together until cheese is melted. Add cooked noodles and beef mixture into greased casserole dish and add soup and cheese mixture. Bake, uncovered, at 350 degrees for 30 minutes. Makes 10 servings.
... and sometimes putting a small can of mushrooms in there for good measure makes it even better. 😀

Brown ground beef in skillet with chopped onion.
Drain grease.
Spread mixture on 8" flour tortillas.
Sprinkle diced tomato, jalapenos, and shredded mozzarella onto the tortillas.
Bake tortillas in oven at 350° for 10 minutes.
Squirt on some Ranch dressing.
Serve warm.
Fold in half to munch.
 
Biscuits & gravy
Variations on chicken breast (Shake'n'bake, wrap in tinfoil with butter & seasonings, coat with olive oil and rotisserie seasonings)
Toss a roast in the crock pot with seasonings before you leave for work in the morning

I've never made this myself, so I'm not 100% sure on the recipe, but this is one of my favorite dinners that my wife makes ...

2 cans cream of chicken soup
8 oz sour cream
1 can rotel tomatoes with green chiles
1 bags of shredded cheddar cheese
onion
burrito sized tortillas
1 pkg of taco seasoning
chicken or ground beef

heat oven to 350.

boil chicken and pull apart/shred, then transfer to a skillet or cook ground beef and drain
add onion and taco seasoning to meat and cook a bit until onions start to soften.

add meat to tortilla, fold up ends, and roll ... place on cookie sheet or in pan

in saucepan, stir together soup, sour cream, tomatoes, and 1/2 the bag of cheese. heat until cheese is melted. pour over tortillas.

bake until sauce begins to bubble. top with rest of cheese. bake until melted.

fast, easy, and very tasty. one of my favorite dinners.
 
Teriyaki Beef (or Lamb) rib salad

Marinate the ribs in teriyaki & fresh crushed pepper
Place ribs on flat iron skillet for ~10 mins each side on a med-low flame

Make a salad bed with:
boston lettuce
grape tomatoes
avocado
scallions
bell peppers
Drizzle with olive oil

Serve ribs on salad bed with a large slice of garlic bread

This thread rocks.

Here's what I usually throw together after coming home starved after class (it's just for me, so double/quadruple for more people):

1 can of beans (any kind, I prefer pinto)
1-3 eggs, depending on hunger
Some grated cheese
Diced onions, garlic, salt&pepper
Chopped up bell peppers

Saute the onions and garlic in a little olive oil until they've translucent, put in the eggs & cheese, wait a couple of seconds for the cheese to soften up, pour in the beans, and stir it all up until the eggs are cooked. It takes like 15 minutes total, and it's delicious. You can also spread it on toast if you're feeling extra hungry.
 
Thanks Ramma2, I used your recipe in the OP and am eating it now. Pretty damn good and easy to make :thumbsup:
 
Easy ass meal I made today. Very tasty and very nutritious.

1 package ground turkey.
1 package McCormick white chili seasoning, or Tex Mex seasoning.
1 15 oz can pinto/black/ whatever beans.
1 cup water.

Brown the meat, add the rest. Simmer for 20 minutes. If you wish, top over spaghetti or rice, but it's delicious by itself. Very quick and cheap/tasty meal.
 
Are you counting prep time?
1 lb pork or chicken cut into small strips
1/2 lb fishball (quartered)
5 pack of ready to eat udon (not instant noodle, this is almost like fresh udon except it is in a vaccum seal bag)
Malaysian Yellow Curry (add to taste)
Garlic (to taste, I use 1/4 of a garlic bulb)
3lb of Taiwanese Cabbage http://www.evergreenseeds.com/tacahylisw.html cut to about palm size

wok on high heat with oil, also setup a pot with water (to prep the udon)
add garlic, fishballs and meat, plus 1/3 of the curry powder you plan to add
when meat is about half done, add cabbage and another 1/3 of curry powder, stir a little to mix the curry in then close lid

hopefully you got the hot water bath ready at this point

one by one, open the udon and dump them in the hot water.
use chopsticks to break them open til they are separated then scoop them out
repeat for all the udon portions

add udon to pot, add in to wok and the remaining curry powder

stir fry til all noodle is dry looking, call it done.






 
"Spanish Rice"
============

About 1 pound ground beef (more if you like)
2 packages Lipton Sides Spanish Rice

Brown and season the groud beef to taste... drain if needed.

Add packages of rice to pan (leaving beef in pan), and prepare it according to the directions on the package.

Top with cheese and serve with salsa and sour cream.

I've also subsituted some of the liquid in the recepie with a can of diced or crushed tomatoes.



"Buttered Noodles"
==============

Scale to meet the quantity you want/need.

Ramen noodles
Butter
Ms. Dash (or seasoning to taste)
Cheese (I like to use the hard "white" cheeses like parmesan/romano/etc.)

Prepare ramen noodles per the package directions... I put the seasoning packet in the water while the noodles boil.

Drain noodles.

Add butter and seasoning to pan, heat until melted.

Add noodles back to pan, mix well.

Add cheese and serve.

We've also made this using egg noodles and pasta, but it seems to taste better with Ramen. 🙂
