Does anyone know if this is possible in crossfire mode? If so, could you please explain how it is done? Otherwise, could it be done with a comp running 2 5870 not in crossfire mode? If so, how?

What is the question, seriously?

Eyefinity currently only works on single cards (5850, 5870 and 5970), stay tuned for CF setups.
However even a single 5870 can drive 3 monitors as long as you use DP for one of them (converter allowed.)
Similarly a 5970 (dual-GPU single card) can drive 6 monitors simultaneously.

It'll work right now, just not as well as it will later. Right now when you switch to Eyefinity it's going to disable the crossfire mode and just use 1 GPU. Later in a driver update it'll be able to stay in Crossfire mode.

You'll still need an active adapter though because all 3 monitors have to be hooked up to a single card.
