Basically, I've read somewhere that 2500/2600 non K versions won't be able to use faster ram speeds than 1333MHz. How come? I thought K and non K versions are the same apart from unlocked multiplier and different gpu.

Whoever wrote that is mistaken. The motherboard chipset limits the RAM speed, not the CPU. H67 can only run up to 1333, P67 doesn't have that limitation.

I've been reading that all sandy bridge processors have an unlocked memory multi meaning you can run up to whatever your board supports

I actually read what OP read, the non K is limited to 1333, the K goes higher, forgot it's 2166 or 1666 higher.

It depends on the motherboard. Some boards allow up to 2200mhz ram on P67. Keep in mind though, that you shouldn't run RAM over 1.58V with these chips. That is the max amount of voltage that is safe for the integrated memory controller.

You're going to have a hard time buying ram at those super high frequencies without exceeding the max recommended voltage. 1.5V is what is recommended, and the fastest you can get at that voltage is 1600mhz (stock speed).

G Skill isn't available in my country, and newegg is not an option. I can only find 1600MHz at 1.6V, 1600MHz at 1.65V and 2250MHz at 1.7V...

EDIT: there's also 1333MHz at 1.5V but without a heatsink.
EDIT2: I've also found on intel's site a datasheet that says pretty much the same thing about i5 7xx and i7 8xx processors. Look at the bottom of page 11 (DDR3 I/O Voltage of 1.5 V)
