Skyrim has always been finicky with shadows. IIRC the FOV changes on sprint too. You may be able to tweak some shadow settings in SkyrimPrefs.ini? Make sure "iShadowMapResolution" is 4096, maybe increase iBlurDeferredShadowMask to a higher number, etc?
Personally I would just install the Realistic Lighting and Shadows mod or similar (I would also recommend the lanterns of skyrim and wearable lanterns as well if you do, otherwise indoors/night gets very interesting without being able to see).

Yeah, Realistic Lighting and Shadows or any one of the thousands of ENB presets will overhaul the way Skyrim handles lighting/shadows and make the game look better overall. Skyrim has some nice assets, but the shadows have always been the game's low point, with all sorts of glitches and flat-out ugly implementation.
