Would a tire size of 225/55/16 mounted on a 16x7" rim be to large for this rim?

What are you opinions?

No. 1990-1993 Mustang GT's came with 16" x 7" rims and the standard tire size was 225/55/16. It's not optimal for that rim, but it will work fine. Some people put 245's on 7" rims, but that's going to far IMO. Optimally, for road racing, you want the tread width to be the same, or slightly less than the rim width.

Not at all,
I had 2 300zx and one Turbo Talon with the same size rims. They fit great.
Come to think of it, my brother's got 225s on on 6" wide rims - those look little balooney.

Also, look into the 225/50 size as well It's a more common size, and the tires are usually cheaper as well as more availability. The shorter sidewall will offset some of the flex from a almost 9" tread on a 7" rim.

Just an idea..

Not really...the difference is so small. I ran 225/50/16's on my '92 for years and it was of like 1-2mph @ 70 - 85mph, below that it was essentially dead on.
