Is it professional to tell them that you need a day or two to think about the offer if i don't like it?

or

How would one try to get more money if its too low?

Ironic thing is that I have an interview after work with another company which makes it worst with my situation with the current company.

Nothing's wrong with telling them you need to consider their offer, in fact it's customary to do so as most people would want to discuss it with someone likea spuse or a friend.

I would get very suspicious if they pressed you for an answer immediately.

you know that an offer to stay with the company is really an offer to keep you until they can find someone to do your job right?

Well I guess what I meant to say is that they have created me a position and offer to bring me on as a full time real employee instead of an consultant.

I love how people assume stuff. Yes you can tell them you'll think about it. Especially in your situation. You should have stated that in the first place.

I would also tell them that I have another interview later today so I will need time to consider my options.

Take the offer HR gives you & counter your interview this afternoon.

Then re-couter your HR deptartment and just take the high bidder

Kiss your job goodbye. You just lost all credibility pitting the companies against each other. Bad move.
