Is there a way for me just be able to switch hard drives and work on other XP install without having to reboot and change the hard drive boot order? I have one on my 160 sata drive (via controller) I use for games, and the other is on my 40 ide drive for office stuff.

Um, WindowsXP has one. You can configure it by editing boot.ini (some info from MS on it: link). You could also install something like GRUB or LILO (which are generally used with Linux, but they can work with other OSes as well).

If you have no idea what I'm talking about, I would suggest staying far, far away from trying to run multiple installations on one machine.
 
It will automatically install a visible bootloader and OS choice menu when you install the other OS. As Matthias said, use search.
