I'm planning on purchasing the EPOX 8RDA(non-plus, don't need the extras) and want your opinion on this. Should I buy 2 sticks of Kingston Hyperx PC3000 at 256mb or 1 stick of 512mb?

You could just do what I am doing. I am probably getting the same board you are (still deciding between the abit and the epox) but I decided to get ONE stick of 512 meg PC3000 HyperX. My reasoning is that by getting 2x256 I virtually bottleneck myself into having 1gb max. It is my understanding that once you put in a 3rd stick of ram then the dual ddr is cut off anyway so why not go ahead and get 1x512megs now and then get another asap. That might be one month or three but I really don't think the added 10-15% performance from getting dual ddr NOW as opposed to having 2x512 a month or two from now is worth it.

I was debating the exact same thing but I figured 512MB should be enough for quite a while and when applications start needing more than 512MB it will be time to do a major upgrade anyway. Plus, there is not much of a performance difference between 512MB and 1GB unless you deal with huge files when photo editing and what not. I mainly surf and play games so this should be fine for me. It's funny though because I was just about to go for the 512MB but decided against it.

If three modules are in an nforce2 board, Dual DDR will be in effect in every situation. As long as there is memory in both channels, Dual DDR is in effect.
