2 of Scarpozzi's Burger Recipes

In both of these recipes make sure you get the burger temp to 160-163 degrees to kill bacteria. I ate a burger recently in a restaurant that had me sick for 2 days.

Scarpozzi's Buffalo Burger
1. Make a standard burger. Season with salt & pepper or your favorite burger seasoning
2. Get a solid bun and toast it on the grill.
3. Frank's Red Hot goes on the bottom of the bun
4. Swiss Cheese goes on the burger, Lettuce and Tomato goes on the cheese.
5. Stack your burger and apply some Blue Cheese Dressing to the top of the bun
Optional is to put Mayo on the bun instead and serve with Blue Cheese Dressing for Fry dipping

Scarpozzi's Butter Basted Burgers

First step is to take a stick of unsalted butter and let it hit room temp. Put it in a bowl and stir it up with a spoon.
Add 3 Tablespoons of fresh chopped parsley, oregano, and basil. If you use dried spices, use only 1 Tablespoon of each.
1 teaspoon of chili powder
1 teaspoon of Kosher salt if you used unsalted butter otherwise, skip this
1 teaspoon of garlic powder or a clove of minced garlic if possible
2 Tablespoons of grated parmesean cheese
Mix it all up and form it into a stick of butter again (or a loaf shape)

Take 1 pound of ground sirloin and form a burger in your hand.
Use your fingers to create a cup in the middle of the burger.
Fill the cup with 2oz of the butter you just made. Fold the edges around the butter so it's totally encased in hamburger meat.

From here you're just going to season the burger with salt and pepper and put on the grill. Rather than doing 3 minutes on each side, cook the burger as hot as possible and flip it within 2 minutes of it hitting the grill to distribute as much of the butter as possble throughout...otherwise it will only drip down half of the burger.

Server on the bun of your choice with the garnishes of your choice.

Enjoy!

Sounds good. I may need to try the second one there.

I do a slightly different variation of the first one:

Make 2 thin patties (seasoned with a little pepper)
Put blue cheese in the middle of one patty, then place other patty on top and seal the edges.
Grill burger as normal.

Meanwhile, mix some mayo with a couple of tablespoons of Frank's Red Hot to make a nice spicy mayo and spread on both side of a toasted bun

Put the burger on the toasted bun, top with bacon, sauteed onions, and a slice of tomato (optional of course).

Wash down with a delicious wheat beer and you have my favourite Summer meal.

sounds good. i'm gonna have to pick up some ground beef now (but not bulk or alternator sized 😛)

i use the following:

ground beef
pepper
oregano
garlic powder

mix in quantities of your choice

i don't use specific amounts, but i prefer the garlic powder to be the strongest of the three, followed by oregano and just a hint of pepper.
tastes good to me 🙂

I made Burgers Cordon Blue yesterday.

Get some beef with a nice 20% fat content, mix in some garlic, onions, Italian bread crumbs, grill to medium/medium rare, top with swiss and thin-sliced deli ham, toast the buns on the grill, throw it together with fresh tomato slices - done.

Simple, but fucking delicious.

I would recommend the Man's Burger Dog.

1. Take a hotdog and cut a groove in it.
2. Place cheese of your choice inside.
3. Wrap with bacon.
4. Mix 0.5-1lb of ground beef with salt, pepper, garlic power, and one egg.
5. Wrap around (3) making a roughly hotdog like shape
6. Place in tin foil and cook through, remove from foil and add some char marks.
