2 Non RAID disks to RAID - lose all?

I know (learned here, actually) that if I start off RAID 0 and break the chain, all of my data is gone.

How about the other way? I have 2 WD1200BB drives with lots of data on each. If I put them in a RAID 0 array, is there any way to preserve the data on them? Maybe copy everything to be on one drive only?

I hope so, I don't wan't to think about backing up the 50GB I currently have occupied! While much of it is MP3's that I have copied to CD-R, I'd still hate to go through the reconstruction.
