2 Monitors with Crossfire

Been doing some googling, but I'm finding mixed answers; I have two Asus 21" 1920x1080 monitors that I currently run off one HD6950. I want to get another one to run crossfire, but I have never ran crossfire/SLI before. Two questions:

1) Will both monitors still plug into the card in PCIe slot#1? Or one monitor per card?
2) Will the cards work in conjunction or will each card be restricted to its own monitor? E.g. If I'm running a game on one monitor, will both cards work together to render the game or will one card be sitting idle?

Note: Gigabyte Z68XP-UD3P motherboard, so I have a x16 and x8 PCIe 2.0 lanes to crossfire on.
