Both from cybergamingpc.com. Please help me choose and if you choose one over the other, please let me know any adjustments. I'm mainly concerned with gaming graphics. I still need a monitor. Probably a 19" for now.

Rig #1: Quad Core. Updated power supply to 600w. Everything else is default.

For gaming graphics, rig #2 will spank rig #1. The 8500GT is the lowest of Nvidia's midrange offerings. SLI only adds around 25% extra performance, so two 8500GT will be around the speed of an 8600GT/GTS. The 8800GTS is in a whole other performance category.

As for CPUs, the extra two cores won't add as much to overall gaming as the better video card will.
 
Thanks for the welcome and advice. I've been poking around here lately and trying to read up on everything, but there is so much information and of course varying opinions. Do you know which 20"+ monitor for under $300 will be able to take advantage of rig #2 and play the latest games. I'm very interested in Team Fortress 2.

Should I even bother with a SLI motherboard?
