This has got to be some sort of error right? No way my 12400f got to 5.5ghz even if just on a single core

If you didn't overclock it then yes, it's an error. Restart the PC and check again

It's possible to OC 12th gen Alder lake chips, just have to use older bios. There're several articles/videos about this. Intel completely locked that in 13th gen though.
