Because a hub doesn't avoid collisions and broadcasts data to all devices connected. That why no one uses them anymore and converted to using switches.

Its like I went back to my first days in networking back in 98.
Almost every single thing you listed, aside Bay Network hubs.

Wow... I mean just wow. As has been said, the collisions are natural on that kind of setup. As for why it is happening, the NIC/OS are probably not properly auto-detecting the speed of the link and need to be set manually.

Is there some reason you NEED the hub? .Because all the 10Mbps equipment I used back in the day still worked fine with a then-modern 100-TX autodetecting switch. (Which would solve most of your issues.)
