1 or 2 graphic cards

Would two be overkill, so it's just wasting money because then you have *two* depreciating assets to get simultaneous depreciation
 
I would get 1 card. Either get a 980 Ti for the same money, or get something like this card on sale to last you a year or two and then pick up a next gen card after both companies have their next gen lineup fully out and you can make an informed decision.

I'm assuming that you'll actually need that amount of gpu power. If you're playing LoL at 1080p, any of these cards are overkill.
 
There's no need to get SLI 970 when a single 980 TI is the same price. Best case scenario the 970 SLI is a bit faster in some games for sure, but worse case you get no scaling at all, and in the middle case you get good scaling but VRAM issues. It doesn't make sense to get 970 SLI right now with prices.
 
unless you really like dealing with tech issues, dual GPU is too dependent on developer & driver support

So, you'll be playing at 4K surround (6480 x 3840 or 11520 x 2160)? Yep you'll definitely want more than one card. GTX 970 won't cut it, go 980 Ti 6GB Tri-SLI, might be enough for low/medium settings in most games.

390X quad crossfire might make the most sense for that due to larger frame buffer and better scaling 😀
