Try removing EVERYTHING not needed to boot. Leave just one stick of RAM and graphics card. Remove and reseat all other connections. See if it now boots up and stays up. It's possible that your power supply can't handle all your add-on cards and hardware.
Have you tried a diagnostic P.O.S.T. card? Just plug it into a PCI slot and it'll give you a code you can look up to pin point the non boot problem. I picked one up on eBay for under $12. It's a real time saver and a very useful thing to have if you build systems.
