You should always watch things in their native resolutions (even on the 360 despite scaling being built in). For games, that's 720p, and for BD, that's 1080p. You might as well future-proof yourself and get all your bases covered with a 1080p TV.
MGS4 is absolutely playable even if you haven't played the rest in the series. One of my friends is in his 3rd or 4th time through (trying for no kills/no alerts), and he hasn't played the series since Metal Gear.

I just started up a game in 1080i, and it played just fine.
Make sure all of your other settings in the display menu are at the defaults--Off/Limited/Off.
There aren't any games that can't output at 720p but can still output at 1080p.
I have an early 1080i CRT that officially doesn't support 720p, but thankfully it can accept it well enough that most of the time it comes out looking normally.
The US PS1 version probably had improvements over the Japanese release. However, remakes would use the original release as the base rather than newer versions.

Well you have to remember that not all people are tech-savvy (comfortable) enough to make their own hardware modifications.
Anyway, the 160GB makes much more sense in Europe because of PlayTV. I think the US bundle is just an afterthought so that we wouldn't feel left out :P
