Use axcrypt or padlock pro. They're both very easy. Axcrypt docs are less than 5 pages and padlock pro is about 3 paragraphs.

The problem with the Windows Encryption out of the box is it still doesnt solve how I encrypt. I encrypt stuff and send it to my friends. The windows stuff just encrypts for that user's account.
