This is exactly what I do before I place large orders online. the bank makes a note of it and the transactions never have problems going through. Takes 2-3 minutes tops.
I use this on my GA-EP35-DS3L. Works like a charm. I watercool my CPU but did not feel like restricting the flow with a northbridge cooler.

Just so people know, this is not just a Gigabyte issue. Many other P35 chipset motherboards have the issue. Even older chipsets have the problem. Heck my Shuttle with the NForce 3 250 chipset has latency issues.
I had that luck for a bit. I found out the power (wiring) in my basement was causing it. I ended up getting a very high quality APC and it solved it. Too bad it killed a number of computer parts (and my wallet) before I figured it out.
If you get the 8800gt and later on decide to upgrade the system, the video card will still be decent. So for sure go that route.

I have had it off for around 8 hours as I was installing my watercooling and it had no issue. Other than that I do not really leave my system off. I do also have a BETA BIOS that might of fixed that issue. I am not sure.

my guess is when you first started using it, your thermal paste was too thick and was overheating your cpu quickly. After some time the heat and pressure spread out the paste for better contact. Resulting in a much better overclock.

So when you run a 3d app it goes nuts? Sounds like the card has a issue. I had the same problem on two 9800's some time ago. One card had a resister that was fried and when it ran 3d apps it would go harwire. The other one had bad ram on the card that would only show up under 3d apps also.
You could certainly get a very nice used SFF type system that would perform pretty nice for that price range. Lots of Shuttles for sale that run Opteron/X2/P4's.
