    pfff, amateur. My last job we did 3 1/2 gallons of water 1 1/2 cups sugar 1 cup salt 2 oz of yeast 65lbs of flour 1/2 qt oil when portioned, came out to just under 100lbs of dough. I hated the recipe because the dough would always be to thin Myself, I make my dough at home to look awesome
