Well, I went ahead and ordered two of the 5750's
It's more than what I need but they will get the job done and hopefully last me at least two years or more..
I've seen several mentions including the AMD forum link provided above about the new video cards coming out in a few months that will address this limitation...
Does anyone have more info on the topic?
It seems the simplest alternative would be to buy two of these cards and run them in SLI, but...
Would I be able to plug three monitors into the Radeon HD 5750?
2 into the DVI port and 1 into the HDMI via DVI>HDMI convertor cable
note: I'm using Linux so Eyefinity support is not yet supported

It is a massive card and most definitely overkill for the type of work I do, but it seems to be the only card on Newegg that supports four DVI connections.
My ATI x700 has seemingly disappeared from the device manager. Simply put, it's no longer listed. The monitor connected to it shows the "no source" message.
I haven't checked the card in other machines yet, but both my operating systems show the card is no longer present.

Thanks for the suggestio, but I have already considered it and decided that the Quad-Core Xeon is worth the extra money.
I'm a developer and designer so I do a ton a lot of multi-tasking. I'll be running Vista x64 emulated through VMware inside of Linux.
I don't want to buy a new video card, and I already have the x1900..not to mention I use Photoshop everyday.
Offtopic, I decided to go with the Xeon instead of the E6600. With the upcoming price cuts I can get a Quad-Core Xeon for the same amount as the E6600.

I should add that I'm not going to put a lot of stress on the video cards ( i.e. no games, no video editing )
And there's probably going to be 4Gb of RAM (not 2), but I haven't decided yet.
I think you will be okay, but my suggestion to you is not to burn a DVD while you are moving files from one hard drive to the other and are doing video editing all at the same time.

I've never experienced any problems with power, and the machine is very stable.

By the way this isn't a server, it's a workstation that always in use (although I don't see how that makes any difference)
