I'll set up a bootable CD / usb and try to flash the bios, and I'll let you all know how it goes.

Got the BIOS flashed successfully and it seems that everything is up and running smoothly with all 8GB installed. Thanks for the advice everyone!
The system isn't overclocked at all.
The board supposedly supports 8GB of RAM in DDR2 800 which is what I am running. Previously I had two sticks if 1GB which worked fine.
Using two sticks of 2GB (4GB total in dual channel), it was still extremely slow.
I've swapped to a single 2GB...
I've been using 64-bit vista for a while now without any issues, using 2GB of RAM.
Recently I bought four 2GB sticks and installed them (all the same brand).
After doing so, the machine is basically unusable since svchost.exe and other windows processes will take up 100% of my CPU at all...
