AsusTek CUSL2 (or one of its descendants) would be my suggestion. It may not be the best performer, but its a great board.

micron and infineon are not the same. infineon is a child company of Siemens. crucial is a child company of Micron it doesnt get MUCH better than infineon, altho i dont know of the overclocking potential.

the old HP 3c and 4c scanners were capable, but very expensive and unavailable now. I would look at HP and AGFA's sites for large format scanners. as far as 11x17 printing is concerned, that is not going to be cheap. you may have to look into the laserjet 8000 series, or perhaps the higher end...

I've had good experiences AsusTek CUSL2 and CUSL2-C. Altho that might be a bit too good for a celery. I wouldnt waste a decent motherboard on a celery. Might as well go with some Amptron POS or something, if you're putting that vegetable of a cpu in it.
