Yes you can preserve subtitles and any audio tracks you want. DVD2One will display a list of all audio tracks and subtitles. You simply check the box next to the tracks you want to keep.
That is incorrect. I just tested DVD2One with my Fantasia DVD. The original DVD is 23.976 fps. The new DVD created by DVD2One is also 23.976 fps. From what I can tell, it appears to reduce the file size by recompressing the video at a lower bitrate. The framerate stays the same.
