Like I said, if the Mac Mini could decode 1080p x264 I'd just buy that.

I've been in your situation and I've done this before.
I suggest the following approach:
1. Rip everything to an external hard drive (perferably a 2.5" laptop drive since it is more shock resistant than a 3.5". I've lost my whole library once dropping a 3.5")
2. Rip to a lossless format...

Looking at putting together a HTPC.
The trick would seem to be getting a video card that can put audio out the HDMI.
