I agree getting hooked on Apple is a real thing. All I own is Apple products, from the iPhone 5S, rMBP, Airport Extreme (AC), iPad, Apple TV, even my phone case is Apple. Just can't get enough :)
There is no explanation on how to do this I believe on the web, but what I would do is just backup to an external drive if you have on just to make your life easier.
Just make sure you have another account setup and select the appropriate options in order to sync and move what you want. Its actually very simple. Good Luck!
I have a iPhone 5s as well and I can attest that Touch ID is definitely not what it has been hyped up to be. The thing worked 1 out of 5 times and sometimes you even have to delete the fingerprint and rescan for it to work again. This might be a software issue of it not recognizing it as good...
I would save the money as well Just get an external monitor and run it that way if your just looking for screen real estate. As you mentioned you already have a rMBP and know its definitely capable of this so just get an external and enjoy.

I know!. Maybe this is an option after all. I personally would never buy a 128GB iPhone as I can even max out the 16 gb version but nonetheless, its still a nice option if it is one.
