Thanks for the tips JustaGeek. Did a bit more reading on the whole 1:1 ratio thing finding out the only real gain is in benchmarks, no real world gain. So since having troubles with the 8x multiplier I've gone back to 9x. Still archived 3.2GHz as I wanted...
Since I had problems with incorrect speeds being shown in various places as I post above in my last post. The problem seems to be something with running the 8x multiplier. Maybe 1:1 is not so good. Are there any other ratios that work well that I could aim for with a 9x multiplier.

I'll start with my OC settings...
E6600 @ 3.2GHz
FSB - Memory Clock Mode = Unlinked
FSB (QDR) MHz = 1600
Mem (DDR) MHz = 800
Multiplier = 8
VCore Voltage = 1.4v
Mem Voltage = 2.013...
