UltraEdit is more expensive but at least for me worth every penny.
The possibilty to open text files on a remote server over SFTP is a big thing for me.
Also PSPad is pretty nice and its free.
There are plenty of video conversions guides available. You can start from doom9.org and videohelp.com
If you want make the conversion very simple you can also try DrDivX

Your source upload defines the maximum throughput so you are limited to 800kbps. That said you can still do it assuming you get constant throughput. I would aim for around 500kbps streams.
