Given it uses an all-in-one color cartridge, does it make sense to order multiple printers to get the extra ink cartridges?

Most printers have a starter cartridge now a days so I would say no.

For any who are curious, here are the ink cartridges, "XL" size combo pack, seems to be the best deal if you need both cartridges.
http://www.amazon.com/Canon-Products..._bxgy_e_text_z
I have nice xerox color laser printer, but I'm debating getting this as a cheap spare.

Yep. You can put whatever on the scanner, and specify if you want it in b/w or color and hit copy. I don't even have mine plugged into the computer.
But yea, the printer definitely comes with a starter ink. The ink doesn't last long.

Well if you want it fast, you can buy it at walmart for $29 (plus tax, of course).

IMO, the thing to do (with cheap printers) is keep 2-3 of them in the closet. Use them when you need to do color printing. And, throw them away, or give them to Goodwill, when the ink runs out.
Personally, I prefer to use oldskool HP DeskJet printers (I own four of them - one with duplex printing), hooked up to a NetGear print server. This turns them into network printers, which can be shared by all devices in my house, via ethernet. Cartridges can be refilled @ Costco for $10 (while you shop) and they last for many months, before needing to be refilled again.
Bottom line: These cheap printers (et al.) are designed to be throw-aways. They don't have a long lifespan, like good quality, workhorse printers, and consumables are expensive.

For $20 you get a Scanner, ink jet color printer, and photo printer. Not sure if you need to buy cable.
Two pakage PG240XL black ink and CL 241XL color ink is $45, lasts reasonably well.
If you need large numbers of black and white get a Laser printer, far cheaper and adequate quality.

One more question: can you still print in b/w if the color cartridge is empty?

Question
Is this one of those printers that won't even print in black&white if you run out of a colored ink?
I don't want to go through that with another printer!

It is best if you run the print the way it is meant to be run if you want the printer to last as long as possible. The printer will send messages to the computer screen telling you that the color cartridge is out and needs to be replaced and ask if you want to continue to print. You have to option to press YES, understand you are not running the printer the way it was meant. The printer may not last as long as intended. It is always good to run with both cartridges with ink.

PG-240 XL black cartridge goes about $20, color CL 241 XL about 25.
The advantage of this printer scanner is the price and functionality.
The shortcomings are the computer cannot turn it on, you have to use power button.
There is no wifi, believe it ships without USB cable
features
There are B&W and Color "Print" buttons.
Basically you can spend a lot more and still get limited ink "ship with" cartridges.
Easy set up and drivers.
It will print B&W until it runs out of B&W ink
Repeat
IF you want cheap and a lot of B&W prints go Laser printer, Brother offers about the lowest cost "per page" laser printing.
Canon Inkjet are about average for print and ink costs.
Basically research remanufactured and refilled cartridges to cut costs. For the amount of Inkjet printing I do the OEM are fine and less trouble.

You can PREorder a 20 inch HP 1600x900 monitor W2072a available in 2-3 weeks from B&H.
Price $66 shipped.
The printer Canon 2120 and cartridges are available from Walmart.
About $30 for printer plus time effort tax and gas. But Walmart has about the best paper prices.
