I saw some defense contractor was making a monthly subscription app that would give encrypted call, texts etc that could be deleted by the sender from the recipients phone. I forget the name, but it looked fairly neat.

Use a PIN, and make sure that Find My Phone is enabled in the settings. That will allow you to remotely lock and wipe the device if you ever lose it.

Grab "Protect My Privacy" from Cydia, you'll be surprised how many apps access your identity, location, and contacts data.
