Ewwww... seems like the wrapper would be sticky, no?

Grocery stores have several different types of wrappers, egg roll, wonton, etc. they are all very similar.

Back in college, my friend held a spring roll rolling station for some diveristy fair.

She didn't even have to steam them. You just pick up the hard round rice sheet, dip it in hot/warm water gently and they instantly become transparent and soft.

Then you use that to make the spring roll.

Well now the real question is, was that springroll paper same as the eggroll paper?

there are rice based wrapper that is steam cooked. not sure they are real dimsum, those tend to be vietnamese rolls or whatever.

I use the eggroll wrapper for steamed dumplings of sorts. It comes out good but just know that they'll be soft and slightly sticky.

I just reread your OP.

What you had at dim sum is not a spring roll. I think those ARE steamed and is not even a ricepaper, but a full blown rice CAKE wrap because they're much thicker & chewierr than rice papers.

eggroll wrappers are made for deep frying an eggroll.

spring roll wrappers are for steaming springrolls.

eggrolls and springrolls are NOT the same thing.

Okay, listen to the real Chinese.

What you're looking for in OP is NEITHER the springrolll or eggroll

You were at a dim sum place, then it was one of THESE. And they're not wrappers, they're flour-based skin.

I high doubt you came across spring rolls at a dim sum place (they're vietnamese food, dim sum is chinese). And spring rolls are NOT steamed anyway shape or form. Rice noodle rolls are steamed.

I'm making egg rolls tonight, coincidentally. My wife and I bake the egg rolls after stuffing them with goodness. They turn out AWESOME, and are obviously a heck of a lot better for you than fried.

I use the standard square wrappers found in any supermarket. With any extra wrappers, I cut them into strips and bake those as well...make nice cruncy appetizers!

Alton Brown has a good show that explains all of this.
Looks like it is getting re-aired soon.
